Daylight Savings

It was an unusual weekend. It was to quiet for my house. Not that it’s ever a noisy house. But it was just Toby and I. Derek was off camping. Saturday was a beautiful day so I took a nap by the pool caught some vitamin D, did all of the laundry that was dropped off.  And ate pizza watched the Age of Adeline and had a cocktail !

Sunday was the day of adventure in the kitchen . So living in Texas to say we eat a ton of Mexican food in our lifetime is probably an understatement . With that being said enchiladas were on the menu and not just any enchilada Zucchini Chicken enchiladas . Replace the corn tortilla with zucchini strips, insert your chicken and roll them up . They were not terrible . But the amount of water zucchini releases when it cooks killed my green sauce. A good friend advised me last night to put salt on the zucchini to get the water out so it does not kill my green sauce next time . I will try to make them again another day . I honestly sent them out to the jury to see what they think.

The second attempt in the kitchen was a stuffed poblano pepper and I thought they turned out nothing special . Derek really like them. I’m pretty sure those will not be happening again.

Sunday turned cold and well it is March and it’s time for the cold to move on . It may rain and storm all it wants to. But the cold must move on. Not that I’m asking for 100 degree temps but those 30’s and 40’s need to move along. Sunday was also the dreaded Spring your clocks forward . We all love it once we get into the swing of things.

But the first couple of days it is a rough one even for Toby he did not want to get out of bed. But not my friend Jordan he is loving today. I’m wondering if it’s beginners luck . I wonder if it will catch up with him later this week. Time will tell.
